Seedy Spelt Pancakes With Citrus Burst Berries

Ingredients

  • 150g spelt flour
  • 1 tsp baking powder
  • 1/2 tsp bicarb of soda
  • 2 eggs
  • 100ml milk of choice
  • 25g butter melted
  • 50g pumpkin or sunflower seeds
  • 300g fresh berries
  • Juice and zest of half an orange
  • A drizzle of maple syrup.

Deliciously fluffy pancakes with seeds and ancient grains. Spelt is a traditional form of wheat, known as an ancient grain, containing fibre, protein, vitamins, and minerals. It does contain gluten but is generally better tolerated in those with gluten sensitivity than regular wheat.

Benefits

Seeds are a great source of protein essential fats and lingans, which are fibre-like compounds, they also provide antioxidant protection, and may support hormone balance, berries are rich in phytonutrients such as anthocyanins that act as antioxidants. Natural yogurt provides us with protein and gut-friendly probiotics.

Method

  • Prep your berries, mix with orange zest and juice of half an orange and 1 tbsp maple syrup.

  • Measure out the milk in a jug, add the eggs and melted butter.

  • Sift flour, baking powder and bicarb in a large bowl. Make a well in the centre, then add the milk and eggs and whisk in gradually.

  • Spoon about 2 tbsp of the batter into to a hot, lightly buttered frying pan.

  • Sprinkle a few seeds on the uncooked side.

  • Once bubbles start to form use a spatula to turn over and toast for a minute or two on the other side.

  • Transfer to a warmed dish covered with a clean tea towel until the batch is done.

  • Enjoy with the juicy citrus berries and yoghurt.
