Cranberry & Chocolate Banana Bread

Ingredients

  • 200g ground almonds
  • 80g buckwheat flour⁠
  • 1 ½ tsp baking powder⁠
  • 1 tsp cinnamon⁠
  • pinch of salt
  • 50g dark chocolate chips
  • 50g dried cranberries
  • 2  banana, overripe & mashed⁠
  • 3 eggs, whisked ⁠
  • 70ml maple syrup⁠
  • 70ml olive oil ⁠

Gluten Free Banana Bread

High in protein, gluten free, and low in sugar, this is my go to banana bread recipe to keep mood and energy levels balanced.

Benefits

Almonds provide us with a rich source of protein and essential fats. Essential fats may help us burn fat, keep us full for longer, and help to absorb nutrients. Buckwheat is one of the few plant forms of complete protein, containing all 9 essential amino acids. It’s naturally gluten-free, so easy on digestion. Cinnamon may have a positive effect on blood sugar, helping to support insulin sensitivity, and is beneficial for people with metabolic issues, such as diabetes, or PCOS.  Cranberries may help to prevent recurring urinary tract infections.

Method

  • Preheat the oven to 180°C
  • Line a loaf tin with baking paper. ⁠
  • Combine the ground almonds and buckwheat flour in a large mixing bowl, with baking powder, cinnamon and salt.
  • In another mixing bowl, whisk together the wet ingredients.
  • Combine wet with dry ingredients and stir well until incorporated.
  • Stir in the chocolate and cranberries.
  • Pour the batter into the lined baking tray.
  • Bake on middle shelf for 45 minutes, or until a pierced knife comes out clean.
  • Allow to cool and store in a tin for up to 5 days.
