Make the base layer – mix nuts with salt in food processor until fine crumbs, add the melted coconut oil and pulse again until a dough begins to form.
Make the caramel layer- blend the dates, almond butter coconut oil and water until smooth paste is formed.
Make the choc layer – melt the choc in a bowl placed above a pan of simmering water (making sure the bowl doesn’t touch the water). Stir until melted and smooth.
Assemble in muffin cases, using 1 dessert spoon of base layer pressed into base, followed by 1 heaped tsp caramel layer. Top with melted choc and decorate with chopped nuts. Store in fridge until set.
