Feel The Glow Squash Soup

Ingredients

Serves 2-4
1 small butternut squash, peeled and de seeded
1 onion chopped
2 celery stalks sliced
3 carrots sliced
1 thumb fresh ginger, grated
2 cloves garlic, crushed
2 chicken/ veg stock cubes dissolved in 800 ml boiling water
200ml coconut milk
1/2 tsp smoked paprika
1/2 tsp cumin
1 tsp turmeric
Salt and pepper to taste (or season with 1tsp miso).
Serving suggestion: top with yoghurt, toasted pumpkin seeds and a drizzle of olive oil.

Method

  • Simply add all the above to a saucepan and simmer with lid on for 20 mins, or until squash is tender.
  • Blend until smooth. (Add more water or coconut milk if necessary to achieve a smooth pouring consistency)
  • Top with toasted pumpkin seeds, a spoon of yogurt and drizzle of extra virgin olive oil.
