Cannellini Lemon & Rosemary Dip

Ingredients

  • 2 cups cooked cannellini or butter beans, well-drained. (Reserve a few beans for garnish)
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. rosemary leaves
  • 1 clove garlic
  • 1 lemon juice and zest
  • 1/4 tsp. cayenne pepper
  • salt and pepper

Method

  • Blend the beans, oil, lemon juice, and zest, and garlic.

  • Add salt and pepper to taste.

  • Top with a few beans, a drizzle of olive oil, cayenne pepper, and a few rosemary sprigs.

  • Lasts in the fridge for 2-3 days.
