Chewy Oat Cookies

Ingredients

  • 100g softened butter
  • 50g brown sugar
  • 50g maple syrup
  • 1 banana mashed
  • 50g wholewheat/ spelt flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 150g oats
  • 50g raisins/ nuts/ seeds

Deliciously chewy, and sustaining. Great for hungry kids in from school.

Benefits

Oats and bananas are high in soluble fibre, which is a great food source for our ‘good’ gut bugs. These soluble fibres may also bind to, and lower levels of toxins in the body and help remove them safely. Cinnamon may help to improve insulin sensitivity and stabilise blood sugars.

Method

  • Preheat oven to 180 C/ 170 Fan/ Gas 5 

  • In a mixing bowl, cream butter and sugar with a wooden spoon until pale and fluffy.

  • Add the syrup and mashed banana.

  • In a separate bowl add flour, baking powder, cinnamon and salt

  • Combine wet with dry and fold in raisins/ nuts or seeds.

  • Use 1 tbsp mixture per cookie and flatten slightly onto a lined baking tray.

  • Bake for 20  mins in middle shelf.

  • Allow cookies to cool before serving.

  • Store in airtight container & eat within a few days.
