Choc Chia Breakfast Puddings

Ingredients

  • 60g chia seeds
  • 400ml coconut milk
  • 3 tbsp cacao powder
  • 2 tbsp maple syrup
  • 1 tsp maca powder
  • 250g raspberries and blueberries
  • 1 tbsp yoghurt + Cacao nibs (optional)

Benefits

Polyphenols in flax and chia seeds are called lignans and have fibre-like effects in the body, helping to clear toxins and excess hormones. Cacao contains four feel good chemicals, which have both stimulatory and calming effects, these are serotonin, tryptophan, theobromine, and phenylethylamine. Macca is a Peruvian root, which may help balance levels of oestrogen hormones, and increase libido. Berries are high in fibre and vitamin C.

Method

  • Mix the cacao and maca powder with 2 tbsp just boiled water, stir to form a paste, then stir in the chia seeds, coconut milk and maple syrup.

  • Cover and store in fridge for min 1 hr. The chia seeds will swell and form a pudding consistency.

  • To serve, crush a few raspberries with a tsp maple syrup in the base of a small jar, top with the choc chia mix, then add a tbsp yoghurt, berries and cacao nibs/ sprinkle of cacao powder.
