Easy Salad Pots With Miso Dressing

Ingredients

  • 2 carrots- grated
  • 1/4 red cabbage -thinly sliced
  • 6 cherry tomatoes- halved
  • 2 radishes – sliced
  • 100g pre cooked quinoa
  • 1 little gem lettuce -shredded
  • 1 handful coriander – chopped
  • 1 spring onion – sliced finely
  • 250g Tofu/Tempeh – diced

Miso dressing:

  • 3tbsp olive oil
  • 2tbsp rice wine vinegar
  • 2tsp miso paste
  • 1tsp soy sauce
  • 1/2tsp sesame oil
  • 1/2 tsp maple syrup

These simple 5 minute salad pots are a great way to help maintain your healthy goals when on the go. Shake them up and serve.. No more soggy salad in your packed lunch.

Benefits

Tofu, tempeh and miso are forms of fermented soy, rich in protein, hormone balancing phytoestrogens and probiotics. Probiotics  contain “good bacteria” that not only support the health of the gut but also influence immune system functioning and regulation. The colours in fruits and vegetables in this salad provide us with a range of phytonutrients beneficial for overall health.

Method

  • Add all dressing ingredients in a jam jar with lid and shake well.

  • Take 2 mason jars with lids and equally share out dressing.

  • Add tofu/ temphe to the jars

  • Add cherry toms, cabbage and carrots

  • Now for the quinoa, followed by radishes, thinly sliced.

  • Finally add lettuce, coriander and spring onions.

  • Secure with lids and store upright in fridge until ready to use, then shake up, and serve out in a bowl or plate.
