Ingredients

  • 1/4 red cabbage sliced finely
  • 2 carrots grated
  • 1 red pepper sliced
  • 1 handful of pomegranate seeds
  • 1 apple cubed
  • 1/2 lemon
  • 1 handful of chopped parsley
  • 1 spring onion sliced
  • 1 handful of chopped nuts or pumpkin seeds

For the dressing:

  • 80ml olive oil
  • 20 ml cider vinegar
  • 1 tsp mustard
  • 1 tsp maple syrup
  • 1/2 clove garlic (crushed)

This Slaw is a great way to jazz up your weekday jacket potatoes, sandwiches or wraps.

Method

  • Combine all the prepared veg and herbs in a large bowl
  • combine dressing ingredients in a jam jar, put on the lid and shake well.
  • Pour dressing over salad, toss well and top with nuts or seeds.
  • Enjoy throughout the week in jacket potatoes, in a sandwich or wrap, alongside salads, or tray bakes.
