Restore Me Chicken Soup

Ingredients

  • The carcass of chicken, after roast, along with all the skin and onions and any juices, or 500g chicken wings.
  • 5 garlic cloves, skin off and crushed
  • a few black peppercorns
  • 1- 2 bay leaves
  • 1 carrot cubed
  • 1 stalk celery chopped finely
  • 100g small pasta shapes
  • 1 handful parsley, chopped
  • 1 handful of watercress (optional)

A soul soothing and strengthening soup Its also my go-to when the kids are sick, reminding me of home-made chicken soup made for me by my mum when I was small. So we keep the tradition going.. Sometimes with tiny pasta shapes and grated parmesan, sometimes with chunky vegetables and topped with watercress.

Benefits

Bone broth provides us with collagen helping to restore the epithelial layer of the gut. Amino acids in bone broth, like arginine, glutamine, and cysteine, have been shown to boost immunity in humans and animals. Rich in calcium, protein, magnesium, phosphorus, vitamin D, potassium, zinc, manganese, copper, boron, iron, vitamin A, vitamin K, vitamin C, and  B vitamins.

Method

  • Put the chicken, juices, garlic, peppercorns, and bay leaves in a deep saucepan

  • Cover with water

  • Bring to the boil and reduce to a simmer

  • Cook for 2-4 hours (or in a slow cooker overnight)

  • Remove from heat and run the soup through a sieve

  • Return the clear soup to the pan, and add chopped carrot, celery and pasta and cook for a further 10 minutes

  • Add parsley, season with salt and pepper.
