Savoury Buckwheat Galettes

Ingredients

(Makes 4 galettes)

  • 150g buckwheat flour
  • 400ml water
  • 1/2 tsp salt
  • 1 clove garlic
  • 100g spinach
  • 50g plain yoghurt
  • 100g cherry tomatoes
  • 100g mushrooms
  • olive oil
Savoury Buckwheat Pancakes

Simply mix buckwheat flour with water to create these tasty Brunch style galettes, which form the base for an array of veg fillings.

Buckwheat is one of the few plant forms of complete protein, containing all 9 essential amino acids. It’s naturally gluten-free, so easy on digestion. Did you know is not actually a grain, but a fruit seed, related to rhubarb and sorrel?

Method

    • Preheat oven to 200 degC/420F/6

    • In a mixing bowl add the buckwheat flour, salt and water, whisk until smooth and the consistency of single cream. Allow to rest for 5 mins whilst you prep fillings

    • Slice the mushrooms, halve the cherry tomatoes, and add both to a roasting tray. Crush the garlic over them, drizzle with olive oil and a little salt and pepper. Cook in the hot oven for 15 mins.

    • Pour boiling water over the spinach to wilt the leaves, strain off the water and add 2 tbsp plain yogurt and a little salt and pepper.

    • Heat a non-stick large skillet. Add a little oil, then 1 soup ladle of the batter, tilting the pan to cover the base evenly.

    • Cook for 2/3 mins per side.

    • Once both sides are cooked, add a portion of each filling to the center, using a spatular, fold in the edges to create a parcel with a tempting window to your delicious fillings.
