Tahini & Honey Cookies

Ingredients

  • 280g spelt flour/ plain flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 180g tahini/ nut butter
  • 170g butter
  • 100g sugar
  • 3 tbsp honey
Tahini Cookies

Deliciously crumbly, chewy, and sustaining. Batch cook tip: storing a log of cookie dough in the freezer, means you’ll have cookies on demand. Great for hungry kids in from school.

Method

  • Preheat oven to 170 Deg C

  • In a pan, over a gentle heat, melt butter, sugar, honey, and tahini

  • In a bowl add flour, baking powder, and salt

  • Combine wet with dry and roll out to form a log shape

  • Cut into cookies, and store rest or log in the freezer until required (remember to label and date)

  • Sprinkle cookies with sesame seeds

  • Bake on middle shelf for 11- 15 mins, until lightly golden.

  • Allow to cool
