Ingredients

  • 4 tomatoes
  • 1 avocado
  • 1 ball of buffalo mozzarella
  • 6 basil leaves
  • 1 clove garlic
  • 2tbsp extra virgin olive oil
  • 1/2 tsp oregano
  • salt pepper
Tricolore Salad

Brimming with Essential fats, protein and polyphenols, this Italian classic is a family favourite.

Benefits

Avocados provide essential fats and fibre. Mozzarella is s great source of protein. Tomatoes provide a rich source of lycopene, a powerful immune-modulating antioxidant. Tomatoes also contain beta-carotene, folate, potassium, vitamin C, and vitamin E. Strong evidence indicates that higher lycopene intake can help protect against prostate, lung, stomach, colon, oral, breast and cervical cancers. Lycopene is most abundant in the concentrated form of tomatoes. A teaspoon of tomato puree per day can be taken as a preventative method, or added to soups and stews and in dressings and sauces.

Method

  • Chop tomatoes in half and thin strips. 

  • Crush garlic and mix with olive oil, salt, pepper and oregano

  • with hands, mix garlic and oil with the tomatoes, making sure to coat them well. 

  • Peel the Avocado, cut in half, remove seed and cut into long strips, squeeze over with a little lemon juice to stop oxidation, which will cause it to brown.

  • Slice the mozarella into thin strips

  • Tear the basil leaves

  • Assemble the salad and serve immediately, or cover and store in fridge.

  • This salad is best eaten the same day.
