Apple & Cinnamon Overnight Oats

Ingredients

  • 100g oats
  • 50g nut butter
  • 50g chia/ flax seeds
  • 1 pint soya/ oat/ hemp milk
  • 2 apples grated
  • 1 tsp cinnamon

These protein rich oats offer a great way to start the day, and can be prepped ahead if you’re on the go.

Benefits

Oats offer a slow release of energy, and are rich in minerals, B vitamins and soluble fibre, to help maintain energy levels, digestive and cardiovascular health. Soaking grains and nuts makes them more bioavailable for our us too. Apples contain pectin, a soluble fibre, that binds, and excretes toxins, cholesterol and heavy metals from the body. Cinnamon may have a positive effect on blood sugar, helping to support insulin sensitivity, and is beneficial for people with metabolic issues, such as diabetes, or PCOS.

Method

  • Cover the oats and seeds with your choice of milk, until just immersed, stir in nut butter.

  • Grate in the 2 apples and the cinnamon, and mix well, so that all the apple is submerged.

  • Cover and chill overnight.

  • Before serving, you may need to loosen up with more milk, as oats will have expanded.

  • Serve up with fresh berries, chia or flax seeds, and toasted flaked almonds.

  • Add a spoon of yoghurt or kefir for extra gut health benefits.

  • Keeps in fridge for 3-4 days
