Ingredients

200g block feta
400g tomatoes
100g green beans
50g black olives
2 cloves garlic
I can of beans/ chickpeas
1tsp thyme/ oregano
2 tbsp olive oil
balsamic vinegar
Serving suggestion: Baked Potatoes/ Rice/ Quinoa/ Couscous
Baked Feta Tray Bake

Have you ever baked feta? I love it’s dreamy creamy-ness, and find it a great way to celebrate our latest veg patch produce.. We first tried baked feta on our holidays in Corfu and have made versions of it ever since.

Benefits

Feta and chickpeas are rich in protein that helps to balance blood sugar levels and support energy levels and mood. Tomatoes are rich source of lycopene, supporting cardiovascular health, and beans are high in fibre to support digestion.

Method

  • Pre-heat oven to 180 Deg C
  • Line a roasting tray with baking paper or foil  (enough to form a sealed parcel)
  • add tomatoes, beans, chickpeas, olives, and crushed garlic 
  • Make a well in centre and nestle in feta block
  • sprinkle with herbs and olive oil
  • Make into a parcel, and bake for 30 mins or until feta is soft and veg juiced
  • Add balsamic vinegar and serve
