Detox Nourish Bowl

Ingredients

  • 1/2 head of cauliflower, cut into florets
  • 1/2 squash, peeled & diced
  • 400g cooked chickpeas
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp veg stock
  • 1 tbsp olive oil
  • 1 cup cooked quinoa
  • 1 cup lettuce leaves sliced
  • 1 cup red cabbage, sliced and mixed with a little salt & olive oil
  • 1/2 avocado sliced
  • 1 handful pumpkin seeds

    Creamy turmeric dressing:

  • 100ml live yoghurt + 10ml water to thin
  • 1 tbsp extra virgin olive oil
  • 1 tsp mustard
  • 1 clove garlic crushed
  • 1/2 lemon juiced and zested.
  • 1/2 tsp turmeric
  • 1 tsp maple syrup
  • Season with salt and black pepper

Benefits

Cauliflower is an excellent source of vitamins, minerals, and fibre, and being a cruciferous vegetable  contains sulfurophane, which aids liver detoxification, helping to clear toxins and excess hormones. Chickpeas are great source of plant-based protein and phytoestrogens, which are beneficial for hormonal health. Quinoa is one of the few vegetarian sources of complete protein (containing all 9 amino acids). Its also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. It is also a valuable source of anti-inflammatory Omega 3 fats, beneficial for hormone balance.

Method

  • Heat oven to 180 Deg C
  • Mix cauliflower, pumpkin and chickpeas with the turmeric, paprika, cumin, stock and oil. Lay out on a baking paper lined tray and cook for 30 mins.
  • Add dressing ingredients to a jam jar with a lid and shake well.
  • Make up a bowl with a base of lettuce, quinoa and cabbage, add roasted veg, top with avocado pumpkin seeds & drizzle over the dressing 😋
