Ingredients

Farinata base:

  • 100g gram flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • A few drops of tabasco (optional)
  • 100ml warm water

Toppings:

  • 2 tbsp roasted veg/ antipasti – peppers and artichoke
  • 2 tbsp hummus
  • A few basil leaves
  • drizzle of extra virgin olive oil

Method

  • Whisk together farinata ingredients in a mixing bowl.
  • Heat a medium non stick frying pan and add a little oil.
  • Pour a thin layer of the batter and fry for a few minutes on both sides until browned and slightly crispy.
  • Remove from heat and spread with generous layer of hummus.
  • Top with antipasti, drizzle with olive oil and scatter a few basil leaves.
