Antioxidants provide electrons to free radicals that damage cells, so prevent disease and illness throughout the body. One of the richest antioxidant food sources available is Cacao, it has an ORAC score (a measurement of the amount of antioxidants) of almost 40x that of blueberries!

This recipe is also high in protein and essential fats along with other hormone balancing and mood boosting ingredients

Method

Make the base layer – mix nuts with salt in food processor until fine crumbs, add the melted coconut oil and pulse again until a dough begins to form.

Make the caramel layer- blend the dates, almond butter coconut oil and water until smooth paste is formed.

Make the choc layer – melt the choc in a bowl placed above a pan of simmering water (making sure the bowl doesn’t touch the water). Stir until melted and smooth.

Assemble in muffin cases, using 1 dessert spoon of base layer pressed into base, followed by 1 heaped tsp caramel layer. Top with melted choc and decorate with chopped nuts.  Store in fridge until set.
